Creamy
Rice Pudding![]()
Ingredients
1 Cup of Rice
1 Quart of Milk
3 cups of Cold Water
1 Cup of Granulated Sugar
1 Tall Can of Evaporated Milk
3 Eggs
2 Tbsp. Vanilla
Directions
Cook the first 4
ingredients together until the rice is tender
Take one can of evaporated milk, add regular milk to make 2 cups
Add
3 eggs and beat together
Add to the rice mixture; bring to a boil
When pudding thickens, remove from heat
Add 2 tablespoons of Vanilla and a dash of Cinnamon

Zucchini
Bread![]()
Ingredients
3 Eggs
1 Cup of Vegetable Oil
2 Cups of Granulated Sugar
2 Cups of Zucchini, peeled and grated
1/2 Teaspoon of Vanilla
3 1/2 Cups of Flour
1/2 Teaspoon of Salt
2 Teaspoons of Baking Soda
1/2 Teaspoon of Nutmeg
1/2 teaspoon of Cinnamon
2 Cups of Raisins
1 Cup of Chopped English Walnuts
Directions
In a large bowl, mix the Sugar and the
Oil
Add the Eggs and Zucchini; Blend well
Add Salt, Flour, Soda, Spices and Vanilla. Mix Well
Add Raisins and Nuts
Bake in 2 Greased and Floured loaf pans at 350 degrees for 1 Hour to 1 Hour and
15 Minutes

Creamed
Cucumber Salad![]()
Ingredients
2 or 3 Nice-Sized Cucumbers
1 Onion
3 Tbsp. Granulated Sugar
3 Tbsp. White Vinegar
1/2 Pint of Heavy Cream
Directions
Peel and thinly slice cucumbers into a mixing bowl
Sprinkle with salt and let stand for
about an hour
Squeeze the water out of the cucumbers and put into a
different bowl
Add the thinly sliced onion (or diced)
Add 3 Tbsp. of Granulated Sugar
Add 3 Tbsp. of White vinegar
Mix well, then pour a 1/2 Pint of Heavy Cream over and let stand until serving
time

Sweet
and Sour Cucumbers![]()
Ingredients
2 Large Cucumbers, peeled, halved lengthwise and sliced thin
1 Small Red Onion, peeled, halved and sliced thin
1/2 tsp. Dried Red Chili Flakes
4 Tbsp. Granulated Sugar
1/2 Cup of Water
5 Tbsp. White Vinegar
1/2 Tsp. Salt
Directions
Place Cucumber, Onion, Chili Flakes into a mixing bowl
In a small saucepan, over low heat, dissolve the Sugar in water
Remove from heat, stir in Vinegar and Salt
Pour this mixture over Cucumbers and Onions in the mixing bowl
Stir and Chill in the "fridge" until served
Notes: If you like it hotter than what this is going to be, just
add more red pepper flakes
If you don't have a red onion, any kind will do

Cucumbers In Sour
Cream![]()
Ingredients
3 or 4 Medium Sized
Cucumbers
Salt
1/2 Pint of Sour Cream
1/2 cup of Sugar
2 Tbsp. of White
Vinegar
Directions
Slice
Cucumbers and Salt them to taste
Let stand for a while to draw out
the water
Drain and squeeze out any excess water
Add the Sour Cream, 1/2 Cup of Sugar and 2 Tbsp. of White Vinegar
Mix well and refrigerate until ready to serve
