My personal experiences with animal totems are The Fox, Dragon, Dolphin and Horse, so naturally, their 'definitions' will be a little fuller.

Land Mammals
Cat- Guardianship, Detachment, and Sensuality.  In meditation, the Cat offers its assistance as a protector.  In dreams it may symbolize the need to fight your way out of a bad situation, or a search of hidden truths.
Cheetah- Swiftness, Speed. In meditation seeing a cheetah can mean you must develop one's self-esteem so that one can move with regalness.  In dreams it can mean one could make events occur quicker.
Jaguar- Release fear. In meditation Jaguar helps one to learn to walk in other realms without fear.
Leopard/ Panther- Swiftness, cunning, Strength, Perseverance, Boldness and Beauty. In meditation Leopard will help one gain confidence for astral travel.
Lion (Cougar, Puma, etc) - Take courage & be brave.  Risk being a living example of what you feel is right.  Become a leader, even if you have no followers.  Lion seeks to show you freedom, strength, and self-confidence.
Lynx- Be still and silent, Become the one who watches.  Honor the secret wisdom you hold. The lynx can lead you to understanding the mystic secrets and occult mysteries.
Tiger- Power and Energy.  Tiger teaches that if action is called for, one shouldn't over analyze the situation. In Meditation Tiger will show one how to find strength to overcome unpleasant situations.
Coyote- Explore your present chaos, See life's humor, Let go & Laugh, Welcome the unexpected. Be careful if Coyote comes to you in meditation or dreams, He is an insatiable trickster, and delights in leading people on a merry chase.  He seeks to teach us to be careful, to watch our steps, so we don’t get tripped up. 
Dog- Be loyal, to yourself, and those you hold dear.  Keep hold of you integrity. In meditation the Dog seeks to guard and lead you to finding a spiritual teacher (or he may BE your spiritual teacher…) In dreams a Dog can symbolize many many things, but most common is loyalty, and the need to find out the truth in any given situation.
Fox- Blend in, don't call undue attention to yourself. Be protective of your ideals, think logically, and keep the heart and mind working in harmony. In meditation, Fox seeks to help us learn through watching. Once again be careful when dealing with Fox, because she’s a very sly one, and loves to trick people into things.  The Fox seeks to show us how to deal with people who are aggressively pursuing you.
Jackal- Astral Travel, especially for seeking a spiritual teacher.  Jackal will help one seek mystical knowledge, particularly pertaining to past lives.
Wolf- Find new paths & options, Break through barriers, Be a role model, share your inner knowing. The wolf seeks to teach us how to avoid dangers.  It will also lead you to a spiritual teacher, or become that teacher itself.  An Excellent guide in the astral plane.
Antelope- Take action. Don't procrastinate, decide what to do and DO IT! The antelope teaches us to be gentle with ourselves, and those around us.  Seek a higher purpose instead of dwelling on the physical.
Buffalo- Make way for abundance, Release your fear. The buffalo tells us to focus on our friends and family.  She reminds us the without spirit, nothing is achieved.
Deer (doe or stag)- Be gentle with yourself & offer kindness to all living things. Stag symbolizes pride, and surefootedness. While Doe teaches us to respect others as they are, and not to try and change them. Commonly a white doe in a meditation, symbolizes a message from the Goddess. Like wise, a White Stag in dreams, or meditations means a message from the God. 
Elk- Persistence brings rewards support your health and stamina, Honor your ability to endure. Honor those of your gender.  Elk shows us how to develop strength and minimize weaknesses, as well as how to pace ourselves.
Moose- See your potential, take pride in yourself, honor your right to BE.    Moose helps us build our self-esteem.  It represents the balance between gentleness and strength.
Cow/Bull- Nourishment, Motherhood (Fatherhood), the Goddess (God). Teaches us to be alert for danger, and shows us when to be aggressive.
Horse- The Goddess, the land, Travel.  When it runs free, horse symbolizes freedom, dignity, and stamina.  When it works with man, Horses symbolizes friendship, cooperation, duty, and loyalty.  Horse is an excellent guide in finding a spiritual teacher, often becoming a teacher itself.  Horse is a loyal companion and guard when traveling.  Horse teaches us to guard against possible danger.  Horse is also a steadfast guide when astral traveling.
Opossum- have a plan, use common sense, honor the strategy that works for you.
Armadillo- Respect your scared space, Banish abuse, and Thrive within your proper boundaries. 
Mouse- focus, pay attention, handle one thing at a time.
Porcupine- Honor your connection to great mystery, have faith. Porcupine helps us remember to mind our own business, and to be prepared to defend ourselves in needed.
Rabbit- Banish fear, listen to you heart, move beyond fears and stagnation.
Squirrel- Use time and energy properly, waste nothing on negativity.  Squirrel teaches us to prepare for the future.
Skunk- Attract what you need in order to grow, Know yourself. Skunk teaches us  courage, and will-power.
Badger- Take charge of your life, trust your abilities. Badger teaches one to fight for ones rights and spiritual ideals.
Weasel/ Ferret- Be the detective, honor what you find, gain hidden information, seeing truth behind the façade. Ferret teaches us to look for the reasons or motivation behind anything.
Bear- go within, personal strength comes from inner-knowledge.  Helps us find balance and harmony.  Seek quiet places for introspection.  Bear is a powerful healer.
Boar- The warrior spirit, leadership, direction. Teaches us to conceal ourselves when in danger.
Beaver- Make today count, build toward manifesting your dreams and goals.  Beaver teaches us to focus our energies into worthwhile, positive things. 
Elephant- Always be willing to learn new things.  Removal of barriers and obstacles. 
Monkey- Ingenuity, car and protection of family. 

 

Winged Ones
Blackbird- Enchantment, the gateway, and The Inner call. In meditation, a blackbird is symbolic of mystic secrets.  In dreams, a blackbird symbolizes a new beginning, or a chance to change.
Blue Jay- Courage, Warnings, Eloquence. In Meditation a blue Jay can mean that one must be aware of future trouble-spots.
Crane- Secret Knowledge, Patience, and Longevity. It’s very closely tied to astral travel. Depending on the geographic location, the crane is alternately symbolic of the Moon, sun, life and death.  In dreams,  it may symbolize either a new beginning, or death (of a habit, relationship, or job)
Crow- Focus on the Positive.  Remove any negativity.  See opportunity in every challenge. The English have a saying about crows “one means anger, two is mirth, three a wedding, four a birth, five is heaven, six is hell, and seven the devil himself.” In meditation, a crow means prophesy, learn from the past but don’t hold on to it. In dreams a crow symbolized change, shape changing, and grounding, as well as divination.
Dove- Communication between the physical and spirit world.  Peace Gentleness and Love.
Eagle- Connect with spirit, feel the freedom found in oneness, let your spirit soar. In  meditation, it symbolizes being able to see hidden spiritual truths.  It bring, strength, freedom, and majesty into your life.  In dreams it could mean that you need to search for the spiritual above the material, and in that you will find freedom, and peace.
Goose- Vigilance, Parenthood, and Productive power. In meditation it means to be open to new beginnings. And in dreams it symbolizes children, and marriage.
Grouse- Find your rhythm, Honor the synchronicity, Spiral into your potential.
Hawk- Honor all life forms as messengers, Trust Life's Messages and signals. In meditations it means you need to be more observant and take a closer look at you surroundings, is there something that can be fixed? Are there things weighing you down that can be gotten rid of? If you hear a Hawk cry out, it’s said to be a warning of upcoming (potentially stressful) situations. In dreams it symbolizes freedom, self defense, and creativity.
Hummingbird- Embrace what makes you happy.  Be joyful. Open yourself to pleasure. In both dreams and Meditations the Hummingbird warns you not to be Judgmental, and to live life to it’s fullest (without hurting yourself or others) The Hummingbird was the Aztec God of War and Conquest
Magpie- Divination of any kind.  Omens and Prophecies. The mysteries of life and death.
Owl- Honor intuition, Outsmart deception, trust your first impressions. In meditations, an Owl offers insight into hidden or vague situations. In dreams, it means shape changing, and divination. In general, if you dream of an owl, something else in the dream will be particularly true.  Native Americans believe that if you hear an owl near your house, someone in your family is going to die.
Peacock- Dignity, Warning, Self-Confidence. Use the symbol of the peacock 'eye' feather to divine into the past or future.
Raven-  See through the lies.  Embrace Life's wonders. Don’t take yourself too seriously. BE careful when dealing with Raven, for he is a trickster, and Loves leading people on a merry chase.  He seeks to show us our mistakes (and LOVES to find them, or help create them) and help us learn from them.
Swan- Accept the gift of grace.  Surrender to the flow.  If a swan if seen in meditation, you should heed your intuition.  In dreams it symbolizes divination at a spiritual level.
Wren- Humility, cunning and God (Male Divinities) in meditation, it may become necessary to protect yourself spiritually.  In dreams, listen close to omens.

Bat- The time is now, the power is you, be flexible.... prepare for rebirth. Bat teaches us how to avoid obstacles.
 

 

Reptiles
Crocodile- Waiting patiently to get at the truth of a situation.  in meditation crocodile could mean that Treachery lies ahead.
Lizard- Rekindle lost goals and desires, Expand your vision, Honor messages in your dreams.  Lizard seeks to help us face our fears.  Ask Lizard for guidance when making a difficult decision. 
Snake- get rid off past events that hinder you, Honor the change in progress.  Snake will aid you in your quest for wisdom.  Snake strives to teach us how to gain psychic energy, as well as enlightment, and a connection with spirit.
Turtle- Connect to The Earth Mother. Ask for her blessing, Fertility & Manifestation. Turtle shows us patience. It tells us to slow down, and enjoy life.  Turtle also shows us how to shield ourselves from any negativity.

 

Sea & River Animals
Dolphin- Accept the gift of usable energy, touch the invisible, Take a breather and Play! don't make something into something it isn't, take everything in stride. Dolphin strives to show us that life shouldn’t be taken too seriously, we need to take time to relax, and enjoy others company. 
Whale- Acknowledge your Mission, Trust your path. Become your chosen destiny.  Whale teaches us the joys, and uses of elemental Magick, creativity, and family.

Fish (esp. Salmon)- Wisdom, inspiration, Rejuvenation.  Fish shows us the way to abundance, and prosperity.  Fish heralds a new friend, or fertility.  It also brings a period of harmony into one's life.

Frog- Magick, sensitivity, Medicine. Hidden Beauty and Power.  Frog teaches us to clear out any negativity, and distractions.
Seal (Sea Lion)- Love, Longing and Dilemmas.  Seal helps us to guard against malicious people. And physical danger.
Otter- Laugh at your antics, balance work and play, reclaim vulnerability.

 

Insects and Arachnids
Ant- be patient, honor the present moment.
Scorpion- Revenge and Dark Magick.  Scorpion will aid one to send dark Magicks and negitivity back to the makers. 
Spider- Wisdom, Creativity, new life.  In dreams Spiders can represent industry.  in meditation Spider could be there to warn one that one is involved in a tempting but entangling situation. Spider can also bring divine insipration and creativity
Bee- Community, celebration and Organization. As well as Loyalty
Butterfly- you are changing- honor your transformation
Dragonfly- Confront denials, break illusions- honor inner truths, Magick is Afoot

 

"Mythological" Creatures
Basilisk/ Cockatrice- Revenge, Retribution, and protection. Basalisk can help one to erect a reflective shield to deflect dark magicks and negative energy.
Dragon- Passion, Power, Inspiration and Transmutation. Also Wealth both material and spiritual.  Dragon seeks to teach us of the spiritual world.  Dragon is also a very powerful totem, as he willingly, and often times without being asked, adds his power to your spells and rituals.
Griffin (Gryphon)- Griffon will help one to understand the balance between the spirit and the cosmic whole.  He will bring Spiritual enlightenment.
Pegasus- In meditation, Pegasus will bring Poetic inspiration. Astral Travel, Fame. Eloquence. 
Phoenix- Rebirth, renewal, Spiritual Growth.  Call upon the Phoenix for strength and renewed energy when facing trials.
Unicorn- Good Will, Fame, Prosperity, Gentleness, Purity, Strength of Mind.  Unicorn, in meditations, can symbolize individual power that is unlimited.
